Gyuto, chef’s knife, with a 215 mm blade. Hand-forged in SG-2 powdered steel.
This particular piece features a custom handle, entirely handmade from thermo treated ash wood with a spacer in stabilized maple burl. The handle is octagonal in shape and the knife balances beautifully in the hand.
Shigeki Tanaka is the blacksmith behind these exceptional knives, which are as beautiful as they are sharp. The blade has a core of SG-2 powdered steel, providing extremely sharp and long-lasting edge retention with a hardness of 62–63 HRC. Surrounding the core are 32 layers of steel that create a stunning Damascus pattern.
