Gyuto | Custom handle
Gyuto, chef’s knife, with a 215 mm blade. Hand-forged in SG-2 powdered steel.
This particular piece features a custom handle, entirely handmade from stabilized maple burl with a black ebony spacer. The handle is octagonal in shape and the knife balances beautifully in the hand. This model has a visible machi, a classic Japanese detail where the handle is mounted with a 3 mm gap between the handle and the blade.
Shigeki Tanaka is the blacksmith behind these exceptional knives, which are as beautiful as they are sharp. The blade has a core of SG-2 powdered steel, providing extremely sharp and long-lasting edge retention with a hardness of 62–63 HRC. Surrounding the core are 32 layers of steel that create a stunning Damascus pattern.
