Spicy White Custom – A Fully Swedish Creation
K-tip gyuto with 250 mm edge length
This knife is forged by Thomas Moberg, a highly skilled Swedish blacksmith. The blade grind has been set by Johan Graaf, and the final finish by Erik Mases at Shinogi Sliperi. Johan, with his extensive background as a professional chef, has tailored the grind to match his own preferences. Apart from the flat and thin grind, the heel is deliberately thicker for added stability and durability when chopping harder ingredients like nuts, while the rest of the edge remains extremely thin and sharp.
The knife has a medium weight and features a refined grind leading to an ultra-thin edge.
The core steel is 26C3, laminated with a layer of nickel and iron cladding. Spicy White is a Swedish high-carbon steel produced by Uddeholm, known for its remarkable similarity to Shirogami #2. This steel takes an exceptionally sharp edge. The blade is hand-laminated in san-mai construction (three layers) by Thomas Moberg. The blade sides feature a raw, dark finish from the forging process—resembling the Japanese kurouchi nashiji ("black pear skin") texture.
The handle is, of course, handmade as well—with an exciting design in stabilized curly birch (masurbjörk), featuring double ebony bolsters.
