Forged in the renowned Shiraki workshop, this is a hand-forged, single-bevel honesuki made from Shirogami #2 carbon steel with a soft iron cladding. The edge is ground for right-handed users, and the blade features a thick spine that provides the correct geometry for a traditional single-bevel grind. Both the forging and sharpening are of consistently high quality, something that is especially evident in the exceptionally flat and well-finished ura (the hollow-ground back side), ensuring excellent contact with the sharpening stone.
The handle is made from D-shaped ho wood and fitted with a black buffalo horn ferrule, offering a traditional feel and excellent comfort during prolonged use.
Kataba is the Japanese term for single-bevel knives, and the Kataba series has been developed to meet the demands of professional users looking for a dependable knife that will perform reliably for many years.
Please note: Neither the core steel nor the iron cladding is stainless. Always dry the blade thoroughly immediately after use to prevent rust from forming.
