Hinoura is one of Japan's foremost blacksmiths, crafting his knives by hand in the small town of Sanjo in western Japan. Each knife is hand-forged and meticulously finished—no blade leaves Hinoura's hands before it's razor-sharp and forged to perfection.
This series uses Aogami Super, a high-carbon steel hardened to 64 HRC. It's extremely hard, holds an edge exceptionally well, and takes a razor-sharp finish. Hinoura's knives are incredibly popular and often have long lead times.
The blade features a kurouchi finish, a raw, black-forged surface that offers a beautiful, rustic look while also providing some protection against corrosion.
Note: Carbon steel is not stainless. Over time, the blade will develop a beautiful patina, though the kurouchi finish offers good protection. If the blade is left wet, rust may form. Please also note that the blade is very thin and hard—it can be damaged if used to chop hard ingredients, bones, or frozen foods.
