Kiridashi is a japanese multi purpose knife with single bevel grind. Its used for just about anything. Opening letters, cutting rope, precision cutting etc. Only the imagination will limit the use of this blade.

Disclaimer: Japanese knives have thin edges with high hardness. This makes them much more fragile than traditional european knives. These blades should under no circumstances be subject to twisting, prising or cutting into hard objects.
