Sujihiki 270 mm | Custom Handle in Stabilized Masur Birch

A beautifully hand-forged sujihiki (slicer) with a 270 mm double-bevel blade, ideal for slicing thin pieces of meat, fish, and other ingredients with precision and ease.

  • Steel: Aogami #2 (Blue Paper Steel) with iron cladding

  • Handle: Custom-made, stabilized masur birch with ebony bolster

  • Finish: Kurouchi (black forged finish)

About the Maker: Shiro Kamo

Shiro Kamo is a highly respected blacksmith and a core member of the celebrated Takefu Knife Village in Japan. His knives are crafted entirely by hand from Aogami #2 carbon steel, known for taking a razor-sharp edge and delivering exceptional cutting performance. This series features a striking kurouchi finish, giving each blade a raw and powerful appearance.

Despite their rugged look, these knives have incredibly thin, sharp edges and outstanding geometry – a favorite among professionals and knife enthusiasts alike.

We call this knife "Kuroi Ryuu" (黒い竜) – meaning Black Dragon in Japanese.


Note on Care – This is Carbon Steel

Aogami #2 is not stainless, and care is required:

  • The kurouchi finish provides some rust protection on the upper blade.

  • The lower portion near the edge will develop a patina over time – this is normal.

  • Always wipe the knife dry immediately after use.

  • Acidic ingredients like citrus and tomatoes will accelerate patina development and may leave visual marks.

  • Both the edge and the iron cladding are reactive – keep them dry to prevent rust.
