Sujihiki
Sujihiki with a 27 cm blade, made in Seki by one of the city’s most highly regarded manufacturers.
Note: This is an extra-thin “laser” that cuts exceptionally well. The very thin blade means it is also flexible and must not be used with force, as it may bend. Use with care.
Weight: 151 g
Blade length (heel to tip): 273 mm
Blade height: 41 mm
Thickness: 1.5 mm
Core steel: Aogami Super (63–64 HRC)
Cladding: Stainless steel
Handle: Octagonal, made from bubinga wood
The blade has a 3-layer construction with Aogami Super carbon steel as the core and stainless steel cladding. The hard carbon steel ensures excellent edge retention, while Aogami Super also offers very good corrosion resistance—especially when paired with stainless cladding. However, these delicate blades must be handled with care, as they can be easily damaged if used on hard ingredients or particles.
