Santoku
Japanese santoku knife with 180 mm blade and an octagonal bubinga wood handle.
This knife belongs to Hatsukokoro's highly regarded Kujaku series, where exceptional cutting performance is paired with one of the most striking Damascus finishes available. The blade features a V-Toku2 carbon steel core, offering an excellent balance of edge retention, toughness, and ease of sharpening. Its thin geometry behind the edge provides a light, agile feel with outstanding precision and excellent cutting performance.
The core steel is clad in a stainless Rainbow Damascus construction, incorporating layers of stainless steel, copper, and brass. The vivid shifting colors give each knife a unique appearance and are the inspiration behind the series' name—Kujaku, the Japanese word for peacock.

Please note: The core steel is a high-carbon steel and is therefore not stainless. The cutting edge should always be wiped dry immediately after use. Over time, the Damascus cladding may also develop a light patina or darken slightly, which is a natural characteristic of the materials. We recommend drying the blade thoroughly after each use and polishing it when necessary. Applying a thin coat of oil will help protect the blade and preserve its beautiful finish.
