A santoku knife with a blade that measures 170 mm.

This knife is hand forged in Tosa, using aogami#2 carbon steel combined with soft iron (hand made warikomi). It is a knife that is easy to sharpen and it takes a great edge. The forge and grind uses less time for fit and finish compared to Sanjo and Sakai knives. They dont have the same luxurious feeling, but they still perform extremely well and will undoubtedly give you great value for your money.

The handle is oval using keyaki wood with a plastic ferrule.

Note: Carbon steel is not stainless! Be sure to wipe the blade dry immediately after use to avoid rusting of the blade.

Disclaimer: Japanese knives have thin edges with high hardness. This makes them much more fragile than traditional european knives. These blades should under no circumstances be subject to twisting, prising or cutting into hard objects. Such handling could easily cause damage to the edge, something that is not valid ground for a warranty claim.
