Usuba | Single bevel
Masamoto Usuba KS-0618 is a traditional, single-bevel Japanese vegetable knife designed for precise and controlled work. The usuba is specialized for techniques such as katsuramuki (thin peeling), precise cuts, and perfectly flat cut surfaces where the structure and surface of the ingredients are preserved.
The knife is supplied with a matching saya, providing safe protection during storage and transport.
The knife is made by Masamoto Sohonten, one of Japan’s most respected knife houses with a long history of professional kitchen knives. The blade is forged in classic carbon steel with a kasumi construction, delivering very high sharpness, clear feedback on the cutting board, and excellent sharpening characteristics on whetstones. The straight edge and tall blade profile provide maximum stability and precision. The single-bevel geometry (kataba) is intended for right-handed users and rewards proper technique with exceptional control, while also requiring care in both use and maintenance.
