Mutsumi Hinoura has created a knife with substantial weight while maintaining a very thin and delicate edge. The thick spine features a clear taper from the forging process, allowing the knife to cut exceptionally well despite itshefty geometry. Perfect for those who want both a robust feel and a thin, high-performance edge.

The blade features a nashiji kurouchi finish, giving it a raw yet elegant appearance with a black-oxidized texture. The knife is fitted with an elegant rosewood handle with black pakkawood ferrule.

    Mutsumi Hinoura is a highly respected bladesmith working in the small town of Sanjo in western Japan. Every knife is hot-forged by hand, and no blade leaves the workshop before it is razor sharp and forged to perfection. This series uses Aogami Super carbon steel, hardened to 64 HRC, an extremely hard steel that holds its edge for a long time and can be sharpened to a razor-like finish. Hinoura’s knives are highly sought after, and lead times are often very long.

    Please note:
    Carbon steel is not stainless. Over time, the core steel will develop a dark patina while the stainless cladding remains stainless.
    Also keep in mind that the thin, hard blade can be damaged if used on hard ingredients, bones, or frozen foods.
