Gyuto with a 249 mm blade. The octagonal handle is made from rosewood and fitted with a light buffalo horn ferrule.
What sets this knife apart is its hand-forged Hon San Mai construction, featuring an Aogami #2 core steel.
Steel: Aogami #2 (carbon steel, not stainless). Always wipe the knife dry after use and never leave it exposed to moisture, as rust can form easily.

The blade features a semi-polished finish known as migaki in Japanese.
Mazaki hand-forges his knives in the city of Sanjo, Japan. His work is held in extremely high regard, and we are very proud to offer these knives. They feature a thick, rounded spine with pronounced distal tapering toward the fine tip. Behind the edge, the blade becomes exceptionally thin, giving the knife an appealing combination of power and precision. The blade faces are hand-finished to a kasumi finish using natural sharpening stones.
