A Japanese chef's knife, gyuto, with 214 mm long blade.
The Komorebi series is one of our absolute favorites here at Cleancut, especially for those looking for a knife with more weight and a clearly convex grind.
It features classic Sanjo forging with rounded shapes and a thick spine that tapers. The Komorebi is hand-forged in Aogami#1 carbon steel, clad with a beautiful layer of damascus steel in iron. The finish on the beautiful damascus blade is relatively glossy. You can see your reflection in the blade without any problem, even though it’s too hazy to be called mirror-polished. It’s simply a glossy kasumi.
The handle is octagonal and made from red sandalwood with a black pakkawood ferrule.
