Munetoshi hand-forges his carbon steel knives entirely by hand and works primarily with Shirogami #2 carbon steel. In addition to kitchen knives, he also produces garden axes and sickles. His philosophy is rooted in creating tools meant to be used, with a focus on blades that cut exceptionally well and withstand hard work. Less attention is given to cosmetic finish, so you can expect a knife with a rugged, utilitarian appearance that delivers outstanding cutting performance.
