Gyuto | Hon San Mai Damascus
Gyuto knife with a 215 mm long blade. The knife has substantial weight and a robust spine that has been rounded and polished to a mirror finish. The handle is octagonal and crafted from ebony with double bolsters in blond buffalo horn.
What distinguishes this knife is that the blade has been hand-laminated in a warikomi design, where the warikomi clad itself has multiple layers. Hon san mai damascus literally means "Genuine 3-layer damascus." Naoki means that it is indeed a three-layer construction, but with a cladding that, in turn, consists of many layers. (Warikomi involves taking a piece of soft iron, cutting a groove, and laminating the core steel into this groove. It results in a cladding with the shape of a C, enveloping the core steel).
Mazaki hand-forges knives in the city of Sanjo, Japan. The knives reach an extremely high standard, and we are very proud to have them in our range. The knives feature a thick and rounded spine, along with a clear tapering towards the thin tip. The blade becomes very thin near the edge, providing a pleasant balance of weight and precision.
