Kashima RS-60 is a series of knives with excellent performance, made in the Japanese knife city of Seki City. The steel used is called PS-60, a stainless monosteel hardened to 60 HRC. In other words, it’s a relatively hard steel that holds its edge well while still being easy to sharpen. Thanks to the very thin blade, this knife cuts extremely well, while the soft, rounded shapes make it comfortable to work with.
