Honesuki | Single bevel
A classic single-bevel honesuki with a 150 mm blade.
Steel: Shirogami #2
Cladding: 1 layer of iron
Blade length: 150 mm
Thickness at heel: 5 mm
Thickness at mid-spine: 3.5 mm
Blade height: 43 mm
Weight: 143 grams
The knife is entirely hand-forged in Shirogami #2 carbon steel with an iron cladding. The edge is single-bevel (right-handed), and the knife has a thick spine to provide the correct bevel geometry. The forging and sharpening are of very consistent and high quality, which is especially noticeable in how flat and clean the ura side lies against the surface. The handle is made from D-shaped ho wood with a black buffalo horn ferrule.
Kataba is the Japanese term for single-bevel knives, and the Kataba series is designed to meet the needs of professional users seeking a reliable knife that will last for many years.
NOTE: Keep in mind that neither core steel nor coat is stainless. Dry the blade dry immediately after use to avoid rust.
