Kiritsuke
Kiritsuke with a 261 mm blade, single bevel and hand-forged in stainless Gingami #3 steel. Forging large, robust blades in stainless steel is technically demanding, which makes knives of this type relatively rare. Yamatsuka specializes in Gingami #3, and their knives are unfortunately quite difficult to source. Yamatsuka forges their knives by hand in Sakai, just outside Osaka. We have visited the workshop several times and are consistently impressed by their advanced induction heaters, used to bring the blades up to temperature before forging.
