Gyuto, chef's knife, with a 214 mm blade and a custom octagonal maple handle.
Taguchi is a young blacksmith from Takefu Knife Village who recently took the step of working under his own name after several years under Yoshimi Kato. This is among the very first knives to leave his own workshop, and we are proud to present his work outside Japan.
The knife features a 210 mm blade with a VG-10 core, a steel that combines excellent sharpness, good edge retention, and easy maintenance. The geometry is thin behind the edge, with impressive tapering from the heel all the way to the tip, resulting in a light, agile feel in hand and exceptional cutting precision.
The blade is finished with an elegant Damascus pattern and a hand-hammered tsuchime finish, adding character and visual depth without distracting from the knife's clean lines.
