Santoku
Santoku knife with 165 mm blade length – Makoto Kurosaki SGSTRIX Tsuchime
A well-balanced all-round knife by Makoto Kurosaki, forged in Echizen—an area with a long tradition of knife making. This knife combines modern steel technology with classic Japanese design.
Steel: SGSTRIX
Blade length: 165 mm
Blade height: 49 mm
Weight: 149 grams
The blade is constructed in a sanmai structure, with a core of SGSTRIX clad in stainless steel. SGSTRIX is a modern powder steel developed for high wear resistance and edge stability.
The hammered tsuchime finish not only gives the blade a distinctive look but also helps reduce food sticking during use. The edge is ground symmetrically (50/50), making the knife intuitive and easy to use for both right- and left-handed users.
The knife is fitted with an octagonal wa handle made from rosewood, paired with a green pakkawood ferrule. The shape provides a stable and well-defined grip, especially for pinch grip, while the materials offer a good balance between feel and durability.
