Hinoura is one of the foremost blacksmiths in Japan, crafting knives in the small town of Sanjo in western Japan. All knives are hot-forged by hand, and no blade leaves Hinoura's hands until it is razor-sharp and forged to perfection. In this series, Aogami Super carbon steel is used, hardened to 64 HRC. It is a very hard carbon steel that holds its sharpness well and takes a razor-sharp edge. Hinoura's knives are extremely popular, and the delivery time is quite long.
The blade finish is called nashiji kurouchi, providing a raw and beautiful surface with a black-oxidized appearance. The handle is octagonal.
Note: Carbon steel is not stainless. If the blade is left in moisture, rust may occur. Also, keep in mind that the thin and hard blade can be damaged if used on hard ingredients, bones, or frozen food.
