So you are looking to purchase a new kitchen knife, and you want it to be delivered razor sharp?

When buying this addition we will hand sharpen your knife on japanese whetstones. The edge will be thin, polished and extremely sharp.

We use a variety of stones for sharpening. Each knife needs a different stone to reach its full potential. We use a combination of synthetic stones from Shapton glass stones, Shapton PRO (Kuromaku) and Kitayama. We also use japanese natural stones for carbon steel knives. These include Ohira, Okudo and Ozuko stones.

 Note: This service is for final edging only. We will not touch the kiriba (blade road) in order to thin the knife or to make kasumi finish. We will only make koba (micro edge) or sharpen an existing secondary bevel, depending on the knife design.
