Mutsumi Hinoura knives are as good as it gets. Nothing is left to chance and each blade is hand forged to perfection, here in the popular carbon steel aogami super. Mutsumi resides in the city of Sanjo, a small city outside Niigata in the north western part of Japan. Many top of the line knives are made here, for example Yoshikane, Shigefusa and Wakui knives. Mutsumi works closely with his father, the legendary blacksmith Tsukasa Hinoura who graced us with a visit and demo in 2017.
The handle is D-shaped.
Note: Carbon steel is not stainless! Be sure to wipe the blade dry immediately after use to avoid rusting of the blade.
Disclaimer: Japanese knives have thin edges with high hardness. This makes them much more fragile than traditional european knives. These blades should under no circumstances be subject to twisting, prising or cutting into hard objects. Such handling could easily cause damage to the edge, something that is not valid ground for a warranty claim.
