Yoshikane is undoubtedly one of the more impressive makers of hand made japanese knives. The Yoshikane factory resides in Sanjo in Japan, and the knives are mostly made from shirogami steel. The forge is always nicely rounded, the tapering is pronounced and the shapes are simply stunning. We are honored to be a trusted vendor of these fabulous knives.
Carbon steel and iron is NOT stainless. Be sure to wipe off all moist directly after use to avoid rusting.
Disclaimer: Japanese knives have thin edges with high hardness. This makes them much more fragile than traditional european knives. These blades should under no circumstances be subject to twisting, prising or cutting into hard objects. Such handling could easily cause damage to the edge, something that is not valid ground for a warranty claim.
